Hi to all of our IWFS Victoria Members,

As per our Calendar of Events, and as announced at our previous events, we are running a cooking masterclassin just less than four weeks on Wednesday 18th October.  There is a limit of only 10 places so please be quick to book if you are keen to attend.  The cost for Young Members (under 36) is $90, for Members is $100, and $110 for Guests.

Our previous Confit Duck, Gravlax, Normandy, Dim Sum, Indian, Pasta and Soufflé classes were great fun.  Now we are going to present you with a Risotto Masterclass.  

This will be presented by our fabulous member Beverley Sutherland Smith.  She would like to show you how to make risotto, using the method taught by the world renown Lausanne Hotel School in Switzerland.  She will also show you what gorgeous things you can do with left over risotto, such as arancini and baked savoury risotto cake.  

Those who know Beverley will be aware that she is a fabulous cook with a significant history in teaching the art of cookery both in Australia and in France.  She has published countless cooking books and currently owns and runs ‘A Seasonal Kitchen’, a delightful casual eatery in Prahran, where she also runs a cooking school.  Be prepared for a fun night with a real expert to give you some skills.

We will start with canapes and Champagne, before proceeding with our risotto masterclass.

Of course we will share supper and complimentary wines with the dishes that have been prepared.  You will get to see how to prepare a beautiful risotto using the classic Lausanne method, as well as to understand what you can do with any leftover risotto.  Our supper will of course be accompanied by some delicious matching wines.  Recipes will be provided.

The class will be held at Beverley’s cooking school at ‘A Seasonal Kitchen’.

Address: 436 High St Prahran (Close to cnr High & Williams, next to Mt Erica car park)

Note: Williams Rd is a clearway until 6:30 PM, parking is easy city bound thereafter

The class will be held on Wednesday October 18 with a 7pm start.

Places are limited to 10 attendees.
