Dinner at Amaru

As 2016 draws to a close, we cap off a year of exceptional food and wine experiences with dinner at one of Melbourne’s newest One Hat restaurants - Amaru.  

We last saw Chef Clinton McIver serving up, if only briefly, some of Melbourne’s most exiting food at a pop-up in the Clayton Bowls Club. Those fortunate enough to seek out the venue were rewarded with an adventurous degustation bursting with new and unique flavours.

Here at Amaru, the ex-Vue de monde chef is again treading new territory. Within the stylishly simple, elegant and intimate 30-seater dining room, McIver is carving out a reputation for contemporary Australian cuisine that arouses the senses and challenges the imagination. One of an elite band of next generation chefs cooking with style and ambition, McIver’s sums up all that is exciting about our local dining scene - intelligent, restrained and outrageously delicious cooking.

As a hint of what to expect, McIver’s signature dishes include delicate hen’s egg, salt baked celeriac, sea butter and mussel, and quiveringly fresh, translucent marron served with a texturally rich, parmesan-softened sunflower seeds and butter sauce. The intimate venue promises excellent service too – which has been described as the ‘graceful epitome of calm and collected’.

The restaurant’s wine-friendly menu tempts us to dig deep into the branch cellar so be prepared for innovative pairings which celebrate a cross-section of stellar old and new world wines. Showcasing matches across five courses, Amaru promises to be the perfect end to a perfect year of wine and food experiences.
