Saigon's January dinner will be an outstanding event.  It will begin with a 2 hour Master Class, conducted by Master Sommelier Evan Goldstein who is visiting HCMC from San Francisco.   Evan Goldstein MS is one of the most prolific wine and food veterans in the US.  In 1987 he became the eigth American and the youngest ever at the time to pass the prestigious Master Sommelier examinations.   His master class will feature 5 vintages from the Californian vineyards of renowned American film-maker Francis Ford Coppola.  This will be followed by a 6 course dinner at Reflections, prepared by Michelin-Star chef Jean Baptiste Natali. The dinner will include crustaceans steamed in algae, green lemon peel foam, sea urchin souffle, young pigeon, roast duck, beef fillet and gaufrettes.  Accompanying wines will include examples from both Sonoma and the Napa Valley in California, including Coppola, Patz & Hall, Chappellet and Mac Rostie.  This exciting event is not to be missed.
