DESCRIPTION:

   Our Miami Branch's 2018 season-opening coed dinner hosted by Richard Cote returned to Pascal's, the small but elegant home of Modern French Cuisine in Coral Gables where renowned chef Pascal Oudin celebrates his 19th year at Pascal’s on Ponce. Six of our eight new members were in attendance and received their IW&FS medallions at the event from Past president John Sullivan. Our new members are Steven Davis, Felipe Del Valle, Hugo Castro, Orlando Gomez Jr., Jose Hernandez-Solaun, Michael Moran, Louis Nostro, and Paul Singerman.

   All the wines were French in homage to the cuisine of Monsieur Chef Oudin.  The dishes naturally displayed the chef’s creativity, and an exciting menu made for wonderful pairings.  We had passed appetizers at our reception with 2013 Georges Laval Champagne Brut Nature Cumières, and followed with a Mediterranean Confit Vegetable Tart  and 2003 Domaine Louis Michel Chablis Grand Cru Vaudésir. Chef prepared a richly flavorful yet light  Porcini Mushroom and Winter Truffle Souffle with Parmesan Broth to pair with 2003 Gérard Raphet Clos Vougeot. For the main course of Five Spice Roasted Muscovy Duck Breast, Pickled Pears, Chestnut and Savoy Leaves, and Duck Gastrique, we enjoyed 1998 Les Cailloux (Lucien et André Brunel) Châteauneuf du-Pape Cuvée Centenaire. While we savored the cheese course of Ashes Cheveaux, Heirloom Yellow And Red Beets, Espelette Jelly, and Mache Lettuceand we poured 1986 Château Gruaud Larose and 1998 Clos de l'Oratoire. We capped off the evening with a Tarte Tatin and 2003 Château La Tour Blanche Sauternes. We have not found any finer French cuisine in Miami. Merci Chef Oudin.
