Welcome to the IWFS Dominus Vertical Stag at Villa Azur on January 24, 2017. Mike Bittel and his industry contacts and the Miami Branch cellar have combined with Winemaker Tod Mostero to present this event with industry support and a Winemaker presentation. Our Champagne for the reception will be 2010 Louis Roederer Rosé provided by Eve Bordarier of MM&D importers. We are then going right to the reds, and we have six. The appetizer course with three offerings served family style will be paired with 2012 and 2014 Napanook. We are planning the Dominus Estate next both the 1996 and 2001 vintages paired with Prime Beef Tenderloin and Sautéed Mushrooms and then both 2006 and 2014 Dominus paired with a Cheese Course. An assortment of desserts will tempt us though we may want to linger over the reds and the cheese. Executive chef Erwin Mallet prepares the cuisine for this evening and pastry chef Sébastien Feneyrol prepares desserts.
