The family‑owned butcher shops found throughout New York City inspired the original Quality Meats, which opened its Miami outpost in the Bancroft Hotel where hearty flavors are savored surrounded by the Art Deco style of South Beach. We introduced "grower" Champagnes to our events with Champagne Marguet Brut "Elements", then our Miami Chapter was treated to a vertical of Château de Beaucastel, with two vintages of Beaucastel Blanc and 4 vintages of mature Beaucastel Rouge paired with a varied menu of enticing seafood  and large cuts of beef which were cured, smoked or aged in‑house. Our flights of  Beaucastel Rouge included the ’89, ’90, ’00, and ’01. The '89 was the star of the show but all the wines showed well, and the discussions on the Beaucastel led by Peter Benjamin and on grower Champagnes led by Christopher Zoller kept our brains as entertained as our palates.
