There’s a treasure trove of incredible local producers on our doorstep that are toiling away in modest workshops to produce world-class
produce. One of them is Frank Hederman, who has been smoking salmon in Belvelly (just outside Cobh) for over 30 years. It’s the only traditional timber smoke house in Ireland where fish are hung for smoking. Decades of smoking have created a sticky black surface of tar on the wooden boards of the smokehouse and the unique atmosphere that contributes to the distinctive character and flavour of the fish produced here. Along with salmon, they also smoke a variety of other
products, including mackerel, mussels, and even butter. Their products are of such high quality that they are in hot demand in many of the world’s top restaurants. Johnny Apple of the New York Times sums it up brilliantly: “Mr. Hederman smokes fish,
which is a little like saying Steinway makes pianos”
It’s a busy time for Frank and Caroline, but we are extremely fortunate that they are opening their doors to the IWFS for a tour of the smoke house and a tasting of some of their incredible produce.
Meeting point Fota Island Hotel at 5.30pm –we will car pool from there. Some people might want to drop in after for a drink in the hotel.
