Arguaby the best French restaurant in Saigon, Le Toit Gourmand is owned by Frenchman Gils Brault.  It is not located in downtown HCMC, but is a little further out, near the airport.  The enthusiasm of Chef/owner/wait staff and sommelier Gils Brault is impressive.  The food is clearly French, but often with a delightful Vietnamese influence.
