Our next culinary adventure will take our appetites to Madam Sixty Ate in Wanchai, where Chef and owner Chris Woodyard offers his version of contemporary European cuisine where he takes country-style staples and gives them a modernist twist. Chris was formerly at W Hotel before striking out on his own last year.
Chris will create for us a specially tailored menu – we’ll start off a wee nosh with our bubbles on the terrace at Madam Sixty Ate –
- sour cream lamb pies
- truffled goasts cheese crisps
- saltcod brandade, cauliflower & eschallots
At the table we will have:
Creamed and crisped artichoke with brioche of fromage frais, pine jelly hazelnut crunch and breast of pigeon
Joseph the Duck, Madam Sixty Ate’s house cured duck ham with melon terrine, mustard dressing & quail’s egg
Paired with:

Peanut butter dacoise with burnt butter nuts, peanut brittle and crunchy milk

The wine pairings for this evening will be wines from the Mediterranean region – a quirky selection from Provence, Spain and Lebanon chosen by our resident member sommelier, Nellie Ming Lee, who’s studying for her Master Sommelier with the Court of Master Sommeliers.
