This years Holiday Dinner was held at Wildwood Kitchen in Bethesda, where we had the entire restaurant to ourselves. Chef Brian McBride prepared an exceptional dinner, and we enjoyed some fabulous wines with the meal. We started with a trio of tasty bites accompanied by a festive Henri Abele Brute Rose.Then it was onto a delicate Crudo of Hamachi, accented with avocado, charred fennel, finger lime, cilantro, and blood orange carrot "consume" served with a lovely white burgundy-Domaine Lamy Chassange- Montrachet Les Marcharelles Premier Cru 2010. This was followed by a Pan Seared Squab Breast and Crispy Confit Leg (the style is reminiscent of a perfectly fried chicken) with potato terrine, black trumpet mushrooms, and red wine reglisse jus, with should pair nicely with a Louis Jado (Domain Gagey) Corton-Pougets Grand Cru 2005. More deliciousness followed with a "Rossini" of cocoa dusted venison loin, accompanied by a celery root puree, foie gras, oyster mushrooms, pickled pomegranate, and black truffle jus. It will be served with a Mitolo Shiraz Saviatar 2006. The final course was an ethereal Whipped Brie, with Honeycrip apples, macho , and a white balsamic reduction , served with a Quinta do Noval Late Bottled Vintage Port 2008.
