Chef Franco’s Tasting Menu features seasonal ingredients from Colorado farmers, ranchers, and craft producers, delivering classic American dishes with a creative twist.
*Our evening will include a brief history of the National Registered Landmark!
4-course CHEF’S TASTING MENU:
1st Course
Salmon Crudo Tartlet, cucumber, lemon, cream cheese
2nd Course
Spring legumes salad with ramp vinaigrette, egg, smoked speck, burrata, greens
3rd Course
Roasted Colorado pork tenderloin, topped with a pistachio nut crust and a Dijon mustard glaze, served with smokey sweet potatoes.
4th Course
Almond cake with white chocolate and spring berries
Food and Wine total is $185 a person (tax and tip included)
